Amping-Up A Favorite Dip

As the country celebrates the last long weekend of the summer, here in SE Texas we are recovering from Hurricane Harvey   Thankfully my family is safe and dry but so many others around us are not.  If you want to help support to disaster relief you can donate here or to the American Red Cross.  Anything you can give will be used to help restore a family!

Bring on a little fiesta

Have a last minute get together this afternoon or evening?  Tired of the same ole boring ranch dip that you make for every party?  I know I am, and so a few weeks ago I decided to spice things up a bit.  With just a few simple additions you can change your basic party dip into a fiesta in your mouth.

As spicy as you want

There are some people in my family that love a ton of heat in their food, and then there are others that prefer a more mild option and this dip has a little something for everyone.  There is a little heat, but not too much, and with the optional toppings your guests can make it as spicy as they like.  

My dad likes everything really spicy so he added in extra jalapeños and extra pico.  For me I like it a bit more mild so I threw in some extra cilantro and additional chopped onion.  Some people ate it just as is, while others added in some extra lime juice.  The possibilities are too many to list, but all are so good.

Fiesta Ranch Dip

A jazzed up ranch dip that is loaded with a little heat, a little crunch and some favorite mexican flavors making this a dish everyone is sure to love

Ingredients

16 oz sour cream (you can use regular or light, but not fat free)
1 packet Hidden Valley Ranch Party Dip (or your favorite ranch dip mixture)
1 cup pico de gallo
1-2 teaspoons chili powder
1 teaspoon lime juice
dash of salt
Optional
Fresh chopped cilantro
Chopped jalapeno
Chopped bell peppers

Directions

In a medium bowl combine all ingredients until well combined
Taste and adjust seasoning as needed
Store covered in refrigerator for at least 2 hours before serving, to allow all the flavors to come together
Serve with your favorite tortilla chips or veggies
ENJOY

Notes

This is great served as a dip or with tacos, taquitos or nachos.

Not just for a party

This dip is not just for your next party.  I made it for Taco Tuesday and added it to some fish tacos.  They would be great on nachos or quesadillas…really anything.     

This is out new go to dip for sure!!
