a perfect late summer quinoa

Quinoa is for sure one of my favorite sides.  I love it on its own, with chicken or fish, or mixed into a salad.  One of my latest creations is this Cilantro Lime Quinoa and I am OBSESSED with it!!

A side for ANYTHING & ANYTIME! 

I love sides that can be used for multiple meals.  For this quinoa I love it it beside some grilled chicken, but the next day I eat it cold for lunch with come chopped avocado & pico de gallo in it.   Yes you read that right, I eat it cold.

One of my favorite ways to have quinoa is cold or in a salad, like I mentioned above.  The texture adds so much to each bite and really helps to take a normal salad to something extra special.

Options are good

Ok, I know that not everyone is a fan of cilantro.  I personally love it, but I understand if you are not.  If cilantro is not your thing, no worries.  You can replace the cilantro with parsley or maybe some thyme.  Fresh oregano or rosemary would be delicious as well.  For a more of an Italian feel use basil, just be carful it can be overpowering. 

You could also replace the lime with lemon.  Really the possibilities are endless with this dish.

Cilantro Lime Quinoa

Light and tasty quinoa side that is a perfect weeknight side.

Ingredients

1 teaspoon extra virgin olive oil
1 small onion, chopped
2 garlic cloves, minced
1 cup quinoa
1 cup water
1 cup chicken stock
2 teaspoons salt
1-2 tablespoons lime juice
1/2 cup cilantro, chopped (or parsley)

Directions

In a medium saucepan, with a lid, heat olive oil over medium heat
Add in onion and cook until soft, about 4-5 minutes
Stir in garlic & quinoa cooking for another 1 minute
Stir in water, chicken stock, salt and lime juice
Bring to a boil
Cover and reduce to a simmer cooking for 15 minutes
Fluff quinoa and stir in chopped cilantro
Taste and adjust seasoning
Serve & ENJOY!

Jump on the train

When I first told my dad I was making him quinoa for dinner, he was not too excited, but then he had this quinoa and now he loves it.  He asks me all the time when I am making it again.  If a 60 something year old man can turn into a quinoa lover you can too.

I even serve it to my niece and nephew.  Now it took them a minute to get into but they really like it now.  As you can see this really is a side that everyone can enjoy, from the littles to the not so little.

Give it a try…you will be on the quinoa train after it for sure.
