a perfect side for Taco Tuesday (or Monday, Wednesday…or any day)

Taco Tuesday is here!!  For me this is definately a favorite.  I love, love, love anything with a Mexican/Tex-Mex flair, so a whole day devoted just to tacos sounds like a perfect day.  

It is so much more than just tacos

I know tacos should be the star of Taco Tuesday but to me the sides are just as important (if not even more).  I love the chips, the salsa, the queso (like this one) and of course the beans and rice.  

Now I am all about the more traditional Red Rice but I am obsessed this Cilantro Lime Rice.   It is AMAZING!

So much flavor in so little time

My sweet sis-in-law, Mary, was the first one who made this dish.  We were having fajitas at their house and she whipped up this delicious rice.  I loved how quick it came together and how delicious it was.  

I am always so impressed by her.  She is the mom of a 3 year old and almost 2 year old so anytime she can throw together a quick side and it is AMAZING I am all in.

PS…and it is pretty

The white rice is studded with bright green making it a beautiful dish all on it own.  I also topped it with a bit if chili lime seasoning for a little extra color and fun.    

You could also mix in some black beans if you wanted to make a super yummy side.  You could also mix in some roasted red peppers and onions.  Maybe even some chopped avocado.  The possibilities are endless.

Cilantro Lime Rice

Rice loaded with tons of flavor in no time, making it a perfect weeknight side for dinner tonight

Ingredients

1 tablespoon extra virgin olive oil
1 small onion chopped
2 garlic cloves, minced
2 cups long grain rice (white or brown)
2 teaspoons salt
1 teaspoon pepper
3 cups chicken stock (or water)
3 limes juiced
1 bunch cilantro, chopped

Directions

Preheat olive oil in a saucepan with a lid
Add in onion and cook until it begins to soften, about 5-6 minutes
Stir in garlic, rice salt & pepper cooking for another 3-4 minutes
Stir in chicken stock and bring to a slow boil
Reduce to a simmer and cover pot, cooking for 20-25 minutes or until rice is tender
Fluff with a fork
When ready to serve stir in lime juice and cilantro
Serve immediately
ENJOY!

Notes

You can add in more or less lime, adjusting to your taste.

If cilantro is not your favorite you can use parsley if you wanted.

Let’s talk about the cilantro

Ok, I know some don’t like cilantro at all.  If you just can’t handle it then use parsley if you want.  The freshness of the herb really does help bring a great brightness to the dish.  I do highly recommend the cilantro though.
