Avocado Cream Tilapia (KETO Friendly)

The weather is warming up, the days are getting longer and school is winding down…that means Spring is here!  With Spring comes lighter dinners, citrus kissed almost everything and beautiful colors everywhere, even on your dinner plates.

Light but so full of flavor

In my family Spring means seafood and lots of it.  One of our favorites is tilapia.  Each filet is frozen individually making it so easy to fix just what you need and it cooks so quick making it perfect for quick dinners.

One of my tricks is to season the heck out of it but with just a few spices…salt, pepper, garlic powder and a little chili powder.  Just that little bit adds a ton of flavor as it cooks, and also a great crust.

If you want to leave one out, or add something in go for it.  Make the seasoning perfect for you and your family.

Avocado Cream Tilapia (KETO Friendly)

Ingredients

Tilapia
4 - 4 oz tilapia filets
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
Avocado Cream
1 whole avocado
1/2 cup sour cream
1/2 cup fresh cilantro, chopped
2 limes, zested and juiced
2 teaspoons salt
1 teaspoon black pepper

Directions

Preheat oven to 350
Line a rimmed baking sheet with parchment paper
Pat dry tilapia with paper towels on both sides
IN a small bowl combine salt, pepper, garlic powder and chili powder
Sprinkle evenly on both sides of each filet
Roast in oven for 8-10 minutes, or until desired doneness is reached
--Avocado Cream--
In the bowl of a food processor, or blender, combine all ingredients for the avocado cream and combine until mixture is smooth, add in a little water or olive oil, is mixture is too thick
Taste and adjust seasoning as needed
Serve over tilapia (or with chips)

A special avocado treat

To make this dish something special I made a quick Avocado Cream.   It comes together super quick and is loaded with TONS of Yummy!

To start with find the perfect avocado…you know the one that has just a little given when pressed but not too much. Next comes a little sour cream, some fresh cilantro and then lime juice.  In my opinion the lime juice is what really makes this cream shine.

Ok now I know some of you may not be cilantro fans, and while I ma not sure how that could be, I can respect your taste difference.  If you want you can substitute fresh parsley for the cilantro…I mean if you really have too.

Trust me tis is a perfect dish for a quick and easy dinner that everyone is sure to love.  It comes together super quick and is loaded with tons of flavor making this a perfect option for dinner TONIGHT!!
