Wes & the Asparagus

Two of my most favorite people in the whole world are my niece and nephew Audra & Wesley.  Audra is just about 8 months and Wesley will be 2 next week and I am obsessed with them.  I try and talk to Wes once a day on the phone and see them as much as I can, and of course I am constantly spoiling them as much as I can.

One of my favorite things to do for Wes is to cook for him.  From the time he could start eating real food I would bring him almost everything I made him…and sometimes when he see’s me he will immediately ask for a cookie (remember I said I love to spoil him), so anytime we can get together with him I jump at the chance and not too long a go we had a family dinner at their house and Wesley was my helper.

Grilling Fun for everyone (even the littles)

On this particular night my brother and sis-in-law did most of the cooking and I was in charge of Wes and pictures so when it came time to take picture of the food Wesley was right there to help.  My sis-in-law has done an amazing job of letting Wes eat a ton of veggies and he LOVES them so when the asparagus came off the grill he was grabbing for one immediately, but first I asked him if he could show me the asparagus and this is what I got…one of the sweetest pics in my world.   He was so eager to help Chelle Chelle (that is what he calls me) and did a great job!!

wes eating aspAfter I got the picture he went in for the taste and after that I couldn’t stop him…even when I moved the platter to the counter he kept coming up and asking for more…he LOVED it!!

Grilled Asparagus

Tender grilled asparagus seasoned perfectly - a side dish everyone will love!

Ingredients

1 lb fresh asparagus spears (about 2 bunches)
1 tbsp extra virgin olive oil
1 tbsp all purpose seasoning (such as Lowry's or your favorite)
1 tsp pepper

Directions

Preheat grill to medium high heat
Lay aluminum foil over a large section of the grates
Trim asparagus - take one spear and bend it until it breaks in the larger part of the stalk, cut all the asparagus the same length, this will help ensure all your asparagus is tender
Spread asparagus onto a sheet pan
Drizzle olive oil over asparagus, tossing to coat well
Sprinkle seasoning & pepper over asparagus, and toss once again to coat evenly
Place asparagus onto foil
Cook for 12-15 minutes, flipping once, or until asparagus is cooked through and tender, some might slightly char
Serve & ENJOY!

For the asparagus my brother just did a real simple seasoning and then cooked them to perfection on the grill, giving them a little bit of char and intensifying their flavor just enough to make them even more delicious!

Break out the grill and throw some asparagus on there to make a perfect side for dinner tonight!!
