casserole = happy Cinco de Mayo

Cinco de Mayo is just around the corner and that means it is time to indulge a little in some delicious Mexican fare.  As I have mentioned many times before I LOVE Mexican food…and this casserole helped foster that love when I growing up.

Honey (my mom) loved casseroles as they really are perfect for a busy family and we were definitely busy.  My brothers and I were involved in tons of activities which made family dinner hard but so important.  Some of our favorite casserole were chicken spaghetti, or this king ranch chicken casserole, but this cheesy mexican chicken casserole with nacho chips was one of my favorites for sure.  

It is all about the yummy

Lets be honest who doesn’t love the orange yummy stuff from the nacho chips that gets all over your fingers each time you eat these delicious chips…and they are even better when paired with this creamy chicken mixture.   My mom would always cook her own chicken breasts and then cut them up, but in my busy world I have found that a rotisserie chicken is a must have for this recipe.  It adds so much flavor and makes this casserole come together so fast making it perfect for a weeknight dinner.

Nacho Chicen Mexican Casserole

A classic chicken casserole that is loaded with tons of flavor and nacho chips, making it a dish everyone will love for sure!

Ingredients

2 cups rotisserie chicken, deboned & skinned, broken into chunks
1 can (10.75 oz) cream of chicken soup, condensed 98% fat free
1 cup light sour cream
4 oz can diced green chilies
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons pepper
1 teaspoon salt
1 bag (8 oz) nacho cheese tortilla chips
2 cups shredded mexican blend cheese, reduced fat, divided
"!Optional toppings:"
Fresh cilantro
Sour cream
Hot sauce

Directions

Preheat oven to 350
Spray a large casserole dish (9x13) with nonstick spray, set aside
In a large bowl stir together rotisserie chicken, cream of chicken soup, sour cream, green chilies, chili powder, cumin, pepper & salt until well combined
Taste and adjust seasoning as needed
Crush 1/2 of the chips and sprinkle over the bottom of the prepared casserole dish, spreading into an even layer
Spoon chicken mixture over crushed chips into an even layer
Sprinkle 1 1/2 cups of cheese over chicken
Crush remaining chips over cheese
Sprinkle remaining cheese over top
Cover pan with foil
Bake for 30 minutes in oven
Remove foil and continue backing for another 10-15 minutes, or until cheese is bubbly and starting to brown
Remove and let sit for 5 minutes before serving
Top with any additional toppings you prefer

Options, Options, Options

If chicken is not your thing you could use this with ground turkey or beef with some taco seasoning, but chicken is my favorite.

Now I know this is a little high in the fat, calories and points but it is cinco de mayo and that deserves a little splurge…but you could always use the baked chips, but lets be real do you really want too?

Make Cinco de Mayo something to remember but without a lot of stress, this quick casserole comes together in no time and is something everyone is sure to love.
