Growing up there is one side dish that I always remember being on almost every Holiday table…Pistachio Fluff Salad. I also remember that I was never a big fan of it (I didn’t like anything green as a kid) but I knew that everyone else LOVED it).
As I was thinking about our family Easter dinner this year I kept thinking about that green stuff that everyone seemed to love, (& my brother asked for it) so I decided it was time to make it. Now as I am sure you have realized a lot of childhood memories are a little distorted being that they are from the mind of a child, but I always thought this green stuff was so hard to make and that it was a really big deal when my mom took the time to make it. Well that memory was quickly shattered when I realized just how easy this beautiful side dish is to make….and now I know why it was on every holiday table.
It really is just a few ingredients are stirred together and then left to chill until it is time to eat…literally it can be made in 5 minutes and then 30 minutes later it is ready to go (in a pinch you could serve it right away).

As I have mentioned before I was not a fan of nuts either when I was a kid, and neither were my brothers, so mom never put nuts in this light salad, but you can for sure if you want. I added a few on top just for looks but next time I will add them in for sure…I think the little extra crunch would be great.
