takin’ it slow with pork chops

Pork & rice-hHappy Monday and Happy (day after) Valentines Day.  I hope your weekend was something to remember.  We had a busy one here in…my uncle came in for my Mammaw’s 89th birthday, we had a birthday party for her (recipes from the party will be coming soon), we played her favorite marble game and then yesterday The Hubby treated me to a special dinner and then a little chocolate treat after…it was truly a special weekend that we will treasure for a long, long time.

Now that all the fun is over (at least for now) it is time to start getting back on track and this slow cooker pork chop & rice dinner is a perfect start.  It is loaded with tons of flavor without a ton of calories and fat, plus it cooks all day in your trusty slow cooker while your at work or running around with your daily chores.  When it is time for dinner you will have a tender pork chop and rice dinner that everyone is sure to love.

Slow Cooker Pork Chops & Rice

Ingredients

1 tsp extra virgin olive oil
1 lb boneless center cut pork chops (3-4 pork chops)
2 tsp salt
2 tsp pepper
2 tsp garlic powder
1 tsp chili powder
1 1/2 cups brown rice
3 cups chicken stock, divided
1 french option soup mix packet
Fresh chopped parsley for serving (if using)

Directions

Heat oil in a large skillet over medium heat
Season pork chops with salt, pepper, garlic powder & chili powder on both sides
Sear the pork chops in the hot pan on each side until nicely browned, about 3-4 minutes per side
Add rice into the slow cooker
In a bowl or large measuring cup combine chicken stock and french onion soup packet until well combined
Pour half of the mixture over the rice and stir to combine
Place seared pork chops over rice
Pour remaining soup mix over pork chops
Cook on low for 5-6 hours or on high for 2-3 hours, or until pork is tender and most of the liquid is gone
Serve with fresh parsley

So my trick to this dish is 2 things…center cut pork chops.  They are leaner and thicker than other pork chops, so they stay moist in the slow cooker and are one of the lowest cuts in fat & calories.  Second is the french onion soup mix…it adds so much flavor without added fat and calories giving the rice and pork chops some great notes of onion as it slowly cooks all day, but don’t worry it is not overwhelming.

Now if pork chops are not your favorite feel free to use boneless, skinless chicken breasts or thighs…they would be delicious as well.

    This looks like a perfect recipe for me. I'll be making it tomorrow. Any more ricey/ risotto recipes would be greatly appreciated(an alternative to any alcohol in recipes would be nice). Also not a fan of mushrooms.

      Tony thanks for the comment...I have several rice/risotto recipes on the blog just search for them in the search bar. Keep checking back as The Hubby and I love rice & risotto so I am always finding fun new recipes. As for alternatives to alcohol in recipes, you can use chicken stock or beef stock normally as a replacement...and I am not a fan of mushrooms either so you won't see them very often from me. :)
