skinny brownies full of fudgy goodness

skinnier brownies-hIf you have been around Half Baked Land very much you know that brownies are a favorite for The Hubby and I both, but lets be real brownies are not the best option when you are trying to watch your waistline and what you are eating….that is until now….now we have skinny brownies.

Now in my quest to find a delicious, fudgy and rich skinnier brownie I went through several versions that were not so delicious, or fudgy or rich.  I found a few that were too cakey or too bland or even worse way too dry, but finally it all came together and this pan of brownies came out of the oven PERFECT!  

Being that this is Valentines Day week I added some fun sprinkles to make them a little more festive, but they are so rich and delicious they speak for themselves and everyone will think they are having a true treat with or without sprinkles….and I won’t tell them it is a lightened-up brownie if you don’t.

Lightened-Up Fudgy Brownies

Rich brownies that are super fudgy but lightened-up a bit...making them a perfect treat for everyone

Ingredients

1 egg white
1 egg
1/2 cup unsweetened applesauce
3 tbsp extra virgin olive oil (or vegetable oil)
2 tsp vanilla
3/4 cup sugar
1/2 cup brown sugar
1 cup flour
3/4 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp salt
1/2 cup chocolate chips, divided
1/4 cup seasonal sprinkles (optional)

Directions

Preheat oven to 350
Line a 9" square pan with parchment paper, set aside
In the bowl of a stand mixer, with a paddle attachment, beat together egg white, egg, applesauce, oil & vanilla until well combined
Add in both sugars and mix until well mixed in
Slowly add in flour, cocoa powder & baking powder until just combined
Add in 1/4 cup of chocolate chips
Pour batter into prepared pan
Sprinkle with remaining chocolate chips and sprinkles, if using
Bake for 25-30 minutes or until edges are firm and middle is set
Let cool in pan for 10 minutes, and then remove from pan and let cool completely before cutting

When I finally perfected the recipe my parents were coming over for dinner that night and I didn’t tell them that it was a skinner brownie than most, I wanted to see what their true reaction was without any preconceived ideas.  From the first bite to last both of them couldn’t stop talking about how good the brownies were and wanted to know why I had never made them before…and when I told them they were lightened-up neither of them believed me and I knew right then this recipe was a keeper.

If you are still looking for a fun Valentines Day treat or just needing a lightened-up chocolate treat these brownies are a must make for sure.  They come together easy and no now would ever goes they are lightened-up.
