Gluten Free has never been so fun

GF espresso choc cookiesChocolate is a must have in my house at all times.  I usually have a chocolate bar, a brownie, peanut butter cup or a cookie to satisfy my daily chocolate need.  For brownies and cookies the fudgier and richer the better for me.  My sea salt caramel brownies are super fudgy but finding a cookie to meet that criteria has been difficult, and I never imagined a gluten free option would give me the perfect chocolate cookie…but I am so glad it did.

I have been making gift baskets and I wanted to have a gluten free option in each basket and so I went on the hunt for a GF chocolate cookie.  After several attempts I finally found the perfect combo and this amazing chocolate cookie was created.  It was rich, fudgy and loaded with tons of chocolate in each bite and GLUTEN FREE!  

To intensify the chocolate flavor I added in some espresso powder, ok now I know you may think that sounds a little weird…but trust me it brings a deeper chocolate intensity to the cookie without adding in the flavor of coffee.  To make sure you couldn’t taste the espresso powder I had The Hubby eat one of the cookies…he cannot stand coffee so I knew if he could taste it then I had added in too much, but he loved them and talked about how the chocolate flavor was so good.  I knew I had a winner right then and there.

Gluten Free Espresso Chocolate Cookies

Rich, and very tender gluten free cookies loaded with tons of chocolate with a little hint of espresso in each bite and they are gluten free making them perfect for all your get togethers!

Ingredients

1/2 cup butter, room temperature
1/2 cup brown sugar
1/2 cup sugar
1 egg
1 tsp vanilla
1/2 tsp baking soda
1 tsp salt
1 tbsp espresso powder
1 1/2 cups cocoa powder
1/2 cup white chocolate chips
1/2 cup dar chocolate chips
Optional Toppings if you desire:
Additional chocolate chips (white & dark)
Sprinkles
Sea Salt

Directions

Preheat oven to 350
Line a cookie sheet with parchment paper, set aside
In the bowl of a stand mixer, or large bowl, cream together butter and sugars until light and fluffy
Add in egg and vanilla, mixing until just combined
Add in baking soda, salt, espresso powder and cocoa powder and mix until just combined
Stir in white chocolate and dar chocolate chips
Using a small cookie scoop place cookie mounds onto prepared pan
Bake for 8-10 minutes, or until cookies are just set
Remove and top with any optional toppings immediately
Let cool on pan for 5 minutes and them move to a wire rack to cool completely
Serve & ENJOY!

To add some fun holiday cheer I added in some white chocolate chips and then topped each cookie with some festive sprinkles, but trust me if you only have dark chocolate or semi sweet chips on hand you will not be disappointed…they are just that good.

I know sometimes the idea of gluten free can be intimating but trust me these cookies are amazing, and you would never now they are gluten free unless you tell them.
