The perfect Fall cookie

Fall is in full swing and that means everything pumpkin, spice and yummy is everywhere!  It seems like every store smells of all the best of fall… a little cinnamon, a little spice and a little sweet.  

The Hubby loves this season as much as I do and has been handing out little “thank you’s” to his clients.  He has given some these chocolate chip cookies, fall maple crunch and then some peanut butter cookie brownies but these little pumpkin delights are my favorite of the bunch for sure.  They are light but loaded with tons of flavor in each bite.  For this go around I used white chocolate chips and dried cranberries but you could use semi sweet chips or milk chocolate chips with any dried fruit you like or chopped nuts you like.  Next time I am thinking dark chocolate chips with dried cherries…I am dreaming of them now.

Pumpkin Surprise Cookies

Pumpkin cookies loaded with tons of fun in each bite...trust me these are the perfect fall cookie

Ingredients

1 cup butter, room temperature
1 1/4 cups brown sugar
3/4 cup sugar
1 egg
2 tsp vanilla extract
1 1/4 cups pumpkin puree
2 cups flour
1 1/2 cups quick cooking oats
1 tsp salt
2 tsp pumpkin pie spice
1/2 tsp cinnamon
1 1/2 cups white chocolate (or any chocolate chip you prefer)
1 1/2 cups dried cranberries (or any dried fruit or nut you like)

Directions

Preheat oven to 350
Line a cookie sheet with parchment paper, set aside
In the bowl of a mixer cream together butter & sugars until light, about 5 minutes
Add in egg, vanilla & pumpkin mixing until well combined
In a bowl whisk together flour, oats, salt, pumpkin pie spice & cinnamon
With the mixer on low, slowly add in flour mixture until just combined
Stir in white chocolate chips & cranberries until well distributed
Let batter sit for 5 minutes and then stir once again to allow oats to absorb some of the liquid
Using a small cookie scoop place cookie mounds onto prepared cookie sheet
Bake for 12-14 minutes or until cookies are golden brown
Remove and let cool on pan for a few minutes and then move to a wire rack to cool completely
